Mint Pea Soup Recipe (serves 2) – My Home

NECESSARY MATERIALS

  • ½ small onion, chopped
  • 1 crushed garlic clove
  • 50 g potatoes, diced
  • 500 ml vegetable juice
  • 125 g frozen peas
  • A few fresh mint leaves

MANUFACTURE

  1. Place the onion, garlic, potatoes and broth in a large saucepan and cook for 5 minutes.
  2. Add the peas and most of the mint and simmer for a further 10 minutes.
  3. Blend until smooth with a hand blender, season to taste and sprinkle with a few mint leaves to serve.
