NECESSARY MATERIALS
- ½ small onion, chopped
- 1 crushed garlic clove
- 50 g potatoes, diced
- 500 ml vegetable juice
- 125 g frozen peas
- A few fresh mint leaves
MANUFACTURE
- Place the onion, garlic, potatoes and broth in a large saucepan and cook for 5 minutes.
- Add the peas and most of the mint and simmer for a further 10 minutes.
- Blend until smooth with a hand blender, season to taste and sprinkle with a few mint leaves to serve.
