MATERIALS

  • 700 grams of flour
  • 500 ml water
  • 10 g granulated sugar
  • 20g butter
  • 2 teaspoons salt
  • 10 g dry yeast

  • 3-4 sprigs of dill

  • 1-2 pinches of sea salt
  • 2 tablespoons grated Parmesan cheese.

MANUFACTURING

Mix dry yeast, sugar and 100 ml warm water in a bowl and wait 15 minutes until the yeast becomes active. Add flour, water and salt and mix until a soft dough forms. Place the dough in a well-greased (approx. 3 tablespoons) deep bowl. Stretch it and let it rest at room temperature for 1 hour. Place the resting dough upside down on a rectangular tray lined with baking paper. Spread evenly on the tray by pressing with your hand. Press holes in them with your fingertips and place green olives in the gaps. Garnish with fresh basil sprigs. Sprinkle with grated Parmesan cheese and a little sea salt if desired. Let it sit at room temperature for another 15 minutes. Bake in an oven preheated to 200 degrees for 40-45 minutes.
